  • $35,000 – $40,000/yr. based on experience

Job Description 

An outstanding opportunity to lead one of Oregon’s premier golf and event destinations located in the heart of one of the most beautiful settings in all of the Rogue Valley, with breathtaking views of the Siskiyou Mountains! This private club offers wonderful experiences in golf, tennis, swimming and dining while also hosting many special occasions and holiday celebrations throughout the year. The full service facility offers a multitude of venue options that can accommodate up to 300 guests, and provides family friendly and gracious service in an inviting and relaxing atmosphere.

We’re seeking an experienced and talented Executive Chef candidate to take responsibility over the entirety of its Food and Beverage operations.  The Executive Chef is a hands on position, responsible for managing and leading the entire F&B team and will support the department with training, coaching and counseling in order to create highly competent employees who offer the best possible quality food along with outstanding service.

In summary, this is a fully “hands on” position, the Executive Chef will “wear many hats”. This is not strictly a “management” position. The Executive Chef will be preparing food on a daily basis, all while overseeing the F&B staff.

Requirements Ideal candidate will have the following:

  • Culinary Arts Degree or BS Degree – Food Service or Hospitality Management Program or five (5) years of culinary experience
  • A minimum of 5 years of experience in varied kitchen positions including sous chef, food preparation, line cook, and expediter.
  • At least 6 months experience in a similar capacity.
  • Expert knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls and presentation
  • Experienced in the development and control of the overall Food and Beverage operations (both revenue and expense) for all guests including design and scripting of all concept menus, special events, and remote dining events.
  • Proficient communication skills, written and verbal to both subordinates and superiors.
  • Proficiency with financial statements, scheduling, payroll, accounting and progressive discipline.
  • Strong honesty, integrity and guest-oriented philosophy

Salary Range & Benefits

  • Compensation package including competitive annual salary commensurable with your experience, expertise and tenure. $60k-$70k plus.

The rise of local establishments giving guests a farm to fork experience has been increasing in the last few years all throughout the restaurant scene. So much so, that we consistently make it a priority to work with some of the best and most unique local and independent restaurants.

What’s the hype about independent restaurants and where is it coming from?

Millennials love local flavor

The more organic, fresh and just picked from out back the menu can get, the more young people are going to like it. As a rising trend in the restaurant industry, the local sourcing and flavors is something chain restaurants just can’t offer.

Television Shows Featuring Hidden Gems

Some of the hottest television shows today are centered around trial and error at a variety of local restaurants. Take “Diners, Drive-ins and Dives” on the Food Network for example, it’s become a badge of honor to be featured as the latest funky, fresh and local restaurant for all to try. There are countless other shows on the Food Network, Cooking Channel and other channels highlighting interesting local restaurants. Much like how HGTV has impacted the way we all shop and buy houses, the Food Network has impacted the way diners pick restaurants.

Do you deliver?

Consumers clearly want food to be delivered directly to them and the trend is being aided by apps which offer anything at any time to anywhere. It’s the biggest single trend in the industry, and many in the business are studying the rising trend. But when it comes to local establishments, diners have demonstrated a willingness to pay higher prices for local cuisine and fork over an extra buck or two for delivery.

Social Media

Have you left a review? Local establishments spread like wildfire by the reviews diners are leaving. Reviews on Google and Yelp remove the risk factor associated with picking an unknown local restaurant. Social media spreads the word about these restaurants more efficiently.

None of this is to say that chains can’t gain a rise in popularity. They can, but general trends show that independent establishments are the newest hotspots.

Pacific Coast Hospitality has partnered with great locally owned and operated independent restaurants and food outlets and will continue for the long haul. Our ideal Foodist will be responsible for developing healthy, convenient and delicious menus for our grocery stores. We want someone who supports our local community of farmers, fishers, ranchers and food artisans by highlighting their products in our recipes…so it’s essential that our Culinary Mastermind have deep knowledge of local and seasonal ingredients. The world is moving toward a more plant-based diet so you have to have experience creating Gluten-Free, Vegetarian, Vegan and recipes. We are cool with meat too but it has to be sustainable raised meat. Obviously serving safe food is critical so please have experience with maintaining the highest food safety and nutritional standards. You also have to be experienced with costing and scaling recipes, forecasting sales along with meeting margin and profitability goals. We are all about sustainable business practices and being stewards of our environment.  Excellent communication and leadership skills are a must-have because we value having fun at work, holding each other accountable and achieving great things together!

Requirements Ideal candidate will have the following:

  • Must love food and people.
  • Professional degree in culinary arts, food science, or equivalent experience.
  • Minimum five (5) years of experience in Food Service management.
  • Broad functional experience in menu development, food costing, sourcing, purchasing, inventory control/receiving.
  • Proven leadership, communication and collaboration skills.
  • Experience researching food trends and seasonal menus.
  • Values community, sustainability, passion for food and fun.
  • Experience with healthy, organic and local ingredients—nutritional knowledge a plus
