Job Description 

We have an excellent opportunity for the right individual to become part of a successful and secure locally owned restaurant company. We are seeking a passionate, experienced and energetic Restaurant Sous Chef to oversee and lead this Italian restaurant’s $2.3 million dollar dining and catering operation. Scratch cooking, local sourcing, high integrity products….our kitchen is committed to providing the highest quality food and service by sparing no expense and by using only the best local products and sustainable resources available.

 

Requirements Ideal candidate will have the following:

  • Extensive background in scratch Italian cuisine (both northern & southern styles)
  • Talent to create interesting and authentic Italian menus items (25% of menu is Chef driven)
  • Commitment to using the finest, local products and sustainable resources
  • Strong high volume line and prep skills
  • Ability to execute menu consistently with the highest quality standards
  • Control costs proactively, delivering established profitability goals
  • Ability to train, teach and mentor with passion
  • Delivering a great guest experience is a top priority
  • Strong operational skills in sanitation and food safety
  • Experience with ChefTec software a plus, but not necessary

Salary Range & Benefits

  • Starting salary range is $42,000 – $55,000 including monthly profitability bonus
  • Discretionary bonuses available

Job Description 

This soon to open multimillion dollar Resort and Casino will feature a 56,000 square foot gaming floor with slot machines and table games, two restaurants, a lounge, a spa, an indoor pool, an indoor/outdoor sauna and an 80 room hotel with 12 luxury suites.

Located in scenic Eastern Washington, this resort is seeking a talented and experienced Resort Restaurant Sous Chef to lead their Asian inspired, full service dining facility. As Sous Chef, you are responsible for overseeing the day to day running of restaurant at both lunch and dinner periods, as well as training the staff in quality control and consistency to adhere to all food items recipes.

Requirements Ideal candidate will have the following:

  • Minimum 6 years in free standing Asian restaurant or high end resort or casino.
  • Formal training in a culinary school.
  • Three years’ experience as Sous Chef in management position.
  • Must be able to obtain a valid Tribal Gaming License.
  • Must possess a valid Washington State Food Handler’s Card and have passed Serve Safe exam.
  • Must have good English skills, including: grammar, spelling, punctuation, vocabulary and reading abilities.

Seeking experienced Restaurant General Manager candidates to fuel growth and expansion for this innovative, creative and progressive management and development company focused on restaurant, entertainment and bar development.

To the uninitiated, this emerging concept could be seen as the next chain built on the combination of eating, drinking, playing games and watching sports on multiple TVs, but this concept goes much further, combining a bowling alley, Ping-Pong hall, an “old school” video arcade and private karaoke rooms with a food-forward gastro diner and a boutique cocktail bar — all in about 24,000 square feet. “First and foremost, we are a restaurant,” noting that the entertainment side accounts for about 10 percent of sales. Annual sales average upward of $6.5 million, hitting the $10 million mark in some larger markets.

The chef-driven menu features diner fare and everything is made in-house from scratch. There is a line of specialty burgers and craft sandwiches, as well daily “green-plate,” i.e. vegetarian, and blue-plate specials. No entrée is over $20. Beverages include milkshakes, a diner mainstay, as well as wine, beer and various types of spiked “punch bowls,” served individually or for a group.

The first restaurant opened in Denver two years ago, and now there are units in Portland, Austin and Detroit. Next year, units are scheduled for Chicago, Indianapolis and Cleveland with growth accelerating to five to eight openings in 2016.

  • 3+ years General Manager experience in a polished casual to fine dining establishment.
  • Ability to establish and execute superior business operations.
  • Experienced in strategic forecasting and cost controls.
  • Act as an ambassador for the vision, the brand and the direction of the Company.
  • Supports a culture that focuses on the guest experience and cultivates an environment rich in integrity of product and service.
  • Emphasizes ongoing training and development of Managers and staff.
