Salt Lake City has become one of the most cosmopolitan cities in the Great American West, with a burgeoning hip restaurant scene following right along. Seated in a beautiful mountain valley and surrounded by the Wasatch Mountains in the East and the Oquirrh Mountains in the West, Salt Lake City is known for their world-class ski resorts, many national parks, The Sundance Film Festival, the largest genealogy library in the world, and of course, the Great Salt Lake. More and more sophisticated diners, both residents and visitors, are seeking exceptional unique dining experiences in Salt Lake City.

Our client is an established award-winning hotel that is on the cusp of creating THE premier restaurant in Salt Lake City. They expect to achieve a Michelin Star rating and James Beard status in their first year of operation, and to establish the restaurant as the BEST fine dining experience in the Salt Lake City metro-area of over 1.2MM people. This is an expert leadership team that is looking for another expert to join their team in this high expectation endeavor. Its not a job for the faint of heart. You must be highly skilled, and have previous Michelin and/or James Beard experience.

The restaurant will be a stand-alone operation that will not be connected to the other hotel dining outlets. It will be its own entity, and the Chef will be responsible for the execution and guest experience in this restaurant only.

Requirements

The ideal candidate must have the following to be considered:

  • Five to ten years as a fine dining Chef or CDC
  • Previous Michelin Star experience
  • Previous James Beard experience
  • Creative-Creative-Creative!
  • Ability to develop and execute a world-class menu
  • Highly skilled in menu development and recipe creation
  • An EXPERT on-the-line cook at every station
  • Passionate about teaching and training TEAM
  • Solid understanding of cost of goods sold and P&L management
  • Strong kitchen organizational skills
  • Skilled communicator that leads by example

We’re seeking an experienced and talented Director of Food and Beverage candidate to operate this high volume, multi-unit resort food and beverage program. Over 8 food and beverage outlets and kitchens spread over the multiple ski areas of the resort. Banquets, concerts, special affairs, corporate events, room service, you name it Schweitzer Mountain Resort delivers at a high level of expertise. If you possess an innate desire to create an experience of a lifetime for your guests, this is the resort for you.

Requirements

The ideal candidate must have the following to be considered:

  • College Degree in Hotel/Restaurant Management or related field of study or minimum of ten years of food and beverage management in an upscale setting.
  • Strong experience in winter (snowbound!) environment, detailed in logistics and organization across a wide array of revenue outlets spread across mountainous terrain.
  • Ability and experienced in the daily management of a food and beverage staff consisting of 100+ staff members across 8+ outlets and programs.
  • Experienced in the development and control of the overall Food and Beverage operations (both revenue and expense) for all guests including design and scripting of all concept menus, service enhancements, special events, and remote dining facilities.
  • Proficient communication skills, written and verbal to both subordinates and superiors.
  • Experienced in extreme seasonal business cycles, with startup and teardown several times annually.
  • Proficiency with financial statements, scheduling, payroll, accounting and progressive discipline.
  • Strong honesty, integrity and guest-oriented philosophy.
  • Comes from a culture of collaboration and team building, Respect for all.
