Job Description 

National Company with local Island roots and outstanding reputation is looking for talented Restaurant Executive Working Chef to help lead busy restaurant with a strong focus on farm to fork, organic, local fare. Help lead dynamic team of engaged team members in overall operations of a high-volume casual dining kitchen. Great scratch food with strong local and visitor guest following. Outstanding, fun environment.

Requirements Ideal candidate must have the following:

  • 3-5 years high volume Chef/KM experience ($5MM or more annual sales volume)
  • Formal culinary training / or culinary degree
  • Strong kitchen organizational skills / ability to set and uphold standards
  • Ability to create innovative local fare, yet also follow corporate specs when needed
  • Able to cook high end food (fresh fish, sushi, steaks etc.) in a fast-paced environment
  • Passion for developing and mentoring a team
  • Track record of achieving financial results
  • Experience in “corporate” environment (high volume “chain” experience a plus)

Salary Range & Benefits

  • Salary – $58k – $62k (starting, based on experience level )

The Economy of Artisan Pizza

Is there such a thing as bad pizza? In today’s ever growing “artisan pizza” market, there might one day soon be a thing as bad pizza which everyone wants to avoid. Cheap and basic don’t often cut it anymore. Consumers are looking for artisan crafted and pizzerias to step it up with the product they deliver.  The freshness of farm-to-table ingredients creates the perception of a healthier pie, while exotic cheeses and meats convey an aura of sophistication and provide a new experience in flavor profiles.

Along with new flavor experiences everyone is looking for quality – what that standard of quality is may vary from consumer to consumer – whether it be taste, organic ingredients used, size of each pie, etc. consumers are starting to realize the art of pizza making and the quality they are receiving on each slice.

In general, most consumers haven’t let a sluggish economy get in the way of pleasing their palates; if anything, they’re getting pickier about quality. In a 2012 survey by research firm Technomic, 34% of diners said they were willing to pay more for gourmet ingredients, compared to 26% in 2010, while 27% said they’d shell out more for natural or organic ingredients, up from 21% two years earlier. In the same study, 33% said they were “interested in trying pizza with highly innovative toppings,” a big jump from 13% in 2010.

The biggest pizza chains in the US today are even making alterations to meet consumers demands for artisan, hand crafted pies.  From Domino’s to Papa Murphy’s and many small pizza shops in cites all across the US, all have leapt into this new market concept, artisan pizzas.

To deliver a superior dining experience to all guests, the Kitchen Manager leads the preparation of fresh, simple, delicious Italian recipes in a fast-paced, high volume kitchen. They ensure the prompt delivery of great tasting food to guests through consistent use and execution of company systems and tools that have been developed and tested over time. Planning, production, and preparation are the keys to their success. In addition, the Kitchen Manager is responsible for creating an environment that builds energy and fun, resulting in an excellent guest and team member experience.

Requirements Ideal candidate will have the following:

  • Minimum 2 years high volume BOH management experience in a full service restaurant
  • Ability to motivate staff to excel in high-volume, time sensitive environment
  • Ability to consistently deliver high quality food
  • Understanding of budgeting and BOH operations
  • Passion for developing and mentoring a team
  • Ability to transfer to other units a plus (but not required)

Salary Range & Benefits

  • $50,000 – $52,000/yr. based on experience
  • Comprehensive benefits package including medical, dental, vision, and life insurance
  • 401K Plan
  • Annual Performance Reviews
  • Paid Vacation and sick time benefits
  • Typically a five day work week with two consecutive days off
  • Quarterly bonus potential
