Hello, we’re Pacific Coast Hospitality and we’re seeking a Restaurant Chef on the Big Island in Kailua-Kona, Hawaii. This is a unique opportunity for a unique candidate.

Job Description

This is a unique opportunity for a unique Restaurant Chef candidate. You can live and work on one of the most beautiful beaches on the Big Island in Kailua-Kona, Hawaii. This brand-new café has all new equipment, a great location, and a dedicated owner; all that is needed is a creative hard-working Chef to design a concept that will work well in the area and operate it successfully and profitably. You must be an entrepreneurial driven Chef, who can design a concept from the ground up, hire and train a great team for both FOH and BOH, and work hard, all while enjoying your days off on the beached of Kailua-Kona, Hawaii.

This is not a short-term project and the owner expects a minimum 5 year commitment to the project. He is interested in talking about a managing-partnership opportunity down the road. This will require a very sharp Chef operator that is capable of installing cost control systems, hiring systems, waste management systems, cleanliness systems, and has some knowledge of marketing and menu development.

Requirements

The ideal candidates will have the following:

  • 2-3 years previous experience as a chef or kitchen manager or sous chef in a busy casual or elevated dining restaurant
  • Experience in all stations on the line and a love of cooking
  • Concept development and menu creation expertise critical!
  • Strong knowledge of back of the house operations including foods, beverages, staff supervision, inventory, and food safety
  • Must be a naturally organized clean working chef
  • Maintain sanitation procedures and organization of work area adhering to all OSHA regulations
  • Strong understanding of COGS and labor systems that lead to restaurant profitability
  • Ability to work under pressure and deal with stressful situations during busy periods
  • Strong communication and leadership skill
  • Must collaborate with owner and work as a team
  • No bad habits!

Salary Range & Benefits

  • Base salary $60k – $75k
  • Bonus – 25% of profits
  • Partnership potential
