Pacific Coast Hospitality is looking for an experienced and energetic Executive Chef for a hotel restaurant opening opportunity on the Waterfront in Vancouver, Washington. This is the highest profile opening in Vancouver this year, and will be the premier hotel and restaurant property in the new Waterfront development in Downtown Vancouver. This leadership position demands an expert Chef with experience in a three meal a day kitchen and banquets and special events. Our client is the top hotel and hospitality development group in the Pacific Northwest, with beautiful properties in several states.

Qualifying candidates will have the maturity and integrity to create systems, build a solid team, and communicate up and down the leadership channels easily and intelligently.

Requirements

The ideal candidates will have the following:

  • Five years as a hotel chef in a top property preferred *upscale high-volume restaurant chef considered
  • Strong banquet and special event experience very important
  • Experience with high-volume high-profile property operations and management
  • Skilled in recipe creation and menu development
  • LASER focus on the FOOD and the TEAM
  • Expert developing and mentoring sous chefs and cooks
  • Complete understanding of the P&L and restaurant accounting
  • Leadership by example – hands-on cook
  • Ability to create systems to support the kitchen operation
  • MUST keep a clean and organized kitchen
  • Experience in product ordering and team member scheduling
  • Candidate must have the energy and mental toughness to succeed in a busy operation

Pacific Coast Hospitality is searching for an exceptional, experienced, Kitchen Manager to lead up the opening kitchen team of this dynamic new concept in downtown Sacramento. This project will be one of the most exciting openings in the Sacramento market in 2022. Our client is a very successful well operated restaurant group based in Portland Oregon with over 20 different concepts and multiple new projects on the books for 2022. This project will have THREE on-site concepts and the Kitchen Manager will oversee the BOH operations, the BOH budgets, and BOH COGS for all. There will be a counter-service restaurant, a top-notch coffee concept, and a 4000 sqft. rooftop event venue that will be one of the most sought-after event spaces in Sacramento.

The ideal candidate has high-volume multi-unit experience, a love of great food and pairing food with beer, expertise with special events, the ability to hire, train and lead the opening kitchen team. This is an outstanding opportunity for the right candidate to build a team from the ground up, and experience professional growth with a respected company, with an established top-tier leadership team.

Requirements

The ideal candidates will have the following:

  • Local Sacramento market experience is a plus
  • MUST be able to COOK! And enjoy COOKING!
  • 2-3 years of kitchen management experience in a high-volume dining/bar establishment
  • Proven trainer and teacher with a strong ability to assess talent and build effective teams
  • Tons of energy and a hands-on approach to leadership
  • Hands on ability to direct teams in high-volume environments
  • Role model with high ethical standards for self and others
  • Good results-oriented business acumen

Job Description

This is a unique opportunity for a unique Restaurant Chef candidate. You can live and work on one of the most beautiful beaches on the Big Island in Kailua-Kona, Hawaii. This brand-new café has all new equipment, a great location, and a dedicated owner; all that is needed is a creative hard-working Chef to design a concept that will work well in the area and operate it successfully and profitably. You must be an entrepreneurial driven Chef, who can design a concept from the ground up, hire and train a great team for both FOH and BOH, and work hard, all while enjoying your days off on the beached of Kailua-Kona, Hawaii.

This is not a short-term project and the owner expects a minimum 5 year commitment to the project. He is interested in talking about a managing-partnership opportunity down the road. This will require a very sharp Chef operator that is capable of installing cost control systems, hiring systems, waste management systems, cleanliness systems, and has some knowledge of marketing and menu development.

Requirements

The ideal candidates will have the following:

  • 2-3 years previous experience as a chef or kitchen manager or sous chef in a busy casual or elevated dining restaurant
  • Experience in all stations on the line and a love of cooking
  • Concept development and menu creation expertise critical!
  • Strong knowledge of back of the house operations including foods, beverages, staff supervision, inventory, and food safety
  • Must be a naturally organized clean working chef
  • Maintain sanitation procedures and organization of work area adhering to all OSHA regulations
  • Strong understanding of COGS and labor systems that lead to restaurant profitability
  • Ability to work under pressure and deal with stressful situations during busy periods
  • Strong communication and leadership skill
  • Must collaborate with owner and work as a team
  • No bad habits!
